BLUEBERRY DUTCH BABY
Good for breakfast or dessert!
1 tablespoon butter
2 eggs
1/2 cup milk
3 tablespoons sugar
1 teaspoon vanilla
2/3 cup flour
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg
pinch salt
1 cup blueberries, fresh or frozen
confectioners' sugar for dusting
Preheat oven to 425*.
Prepare a 10" pie pan with nonstick spray.
Place butter in pan and put in oven to melt the butter and preheat pan.
While pan is heating, combine eggs, milk, sugar and vanilla in a mixing bowl.
Add flour, cinnamon, nutmeg and salt and whisk until smooth.
After butter has melted, about 5 minutes, remove pan from oven.
Evenly sprinkle blueberries over melted butter.
Slowly and gently pour batter over the blueberries.
Bake for 25 - 30 minutes at 425*, until center is set.
Dust with confectioners' sugar before serving if desired.
