CHOCOLATE BAGELS
1 1/2 cups warm water
2 1/4 teaspoons yeast
3 1/2 cups flour
1/2 cup sugar
1/4 cup cocoa
1 teaspoon salt
1 tablespoon instant espresso powder
1 teaspoon vanilla
1 cup chocolate chips
Combine all ingredients except chocolate chips in pan of bread machine.
Process using "DOUGH" setting so ingredients are kneaded and risen.
Transfer dough to lightly floured surface and knead in chocolate chips, adding flour as needed.
Shape into a log and cut into 10 even pieces.
Form into rings, cover, and let rise for 1/2 hour.
Meanwhile line 2 baking sheets with parchment paper and preheat oven to 400*.
Bring 8 cups of water to a gentle boil in a large pot.
Boil bagel rings for 30 seconds on each side, and then transfer to prepared baking sheets.
Bake at 400* for 20 - 25 minutes until lightly browned.
