LIBERTY BREAD
1 1/2 cups flour
1 cup cornmeal
1/2 cup oats
6 teaspoons baking powder
1 teaspoon salt
4 tablespoons butter, softened
2 eggs
1 1/2 cups hot water
1 teaspoon poppyseed if desired
Preheat oven to 350*.
Prepare a 9 x 5 loaf pan with nonstick spray.
Combine all dry ingredients in mixing bowl.
Add softened butter and eggs, and combine well.
Add hot water and mix to form a smooth batter.
Pour into prepared pan and smooth out evenly.
Sprinkle with poppyseed.
Bake at 350* about 45 minutes, until browned.
Cool in pan 5 minutes.
Remove from pan and cool completely on rack before slicing.
