Mushroom Wild Rice Soup

MUSHROOM WILD RICE SOUP

2 Tbl olive oil
2 stalks celery, chopped
8 oz. pkg sliced mushrooms
4.3 oz. pkg  Rice-a-Roni Long Grain and Wild Rice
48 oz. chicken stock
salt and pepper

In a medium pot, saute celery in oil for about 5 minutes.
Add rinsed mushrooms and saute all 5 minutes more.
Mix in dry rice, seasoning packet, and chicken stock.
Simmer all about 20 minutes, until rice is tender.
Season to taste with salt and pepper if desired.

About 6 servings
