Pumpkin Spice Dutch Baby

PUMPKIN SPICE DUTCH BABY

2 tablespoons melted butter
2 tablespoons brown sugar
2 eggs
1/2 cup pumpkin puree
1/2 cup milk
1/2 teaspoon pumpkin pie spice, or more to taste
1/2 teaspoon salt
1/3 cup flour

Preheat oven to 425*.
Prepare a 9"pie pan with nonstick spray.
Place prepared pan into oven to preheat while mixing batter.
Combine batter ingredients until smooth.
Pour carefully into hot pie pan.
Return to hot oven and bake 15 minutes at 425*.

While baking, prepare crumb topping:

2 tablespoons softened butter
2 tablespoons flour
2 tablespoons oats
2 tablespoons brown sugar
1/2 teaspoon cinnamon

Cut ingredients together to make coarse crumbs.
Remove pancake from oven and crumble topping over partially-baked batter.
Return to oven and continue baking 10 - 12 minutes longer until set and golden.

Serve immediately.
