1 cup sugar
1/2 cup butter, softened
15 oz. container ricotta cheese
1 teaspoon almond extract
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
Sliced almonds for decoration if desired
Preheat oven to 350*
Prepare cookie sheets with nonstick spray.
Beat sugar and butter together until light and fluffy.
Add ricotta cheese, almond extract and egg, and beat until well-combined.
Add flour, baking powder and salt, and beat until soft dough forms.
Drop by tablespoons onto prepared cookie sheets.
Sprinkle with sliced almonds if desired.
Bake at 350* about 18 minutes, until lightly golden.
Transfer baked cookies to racks for cooling.
