1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup whole wheat flour
1 cup white flour
1/2 cup oats
1 teaspoon baking powder
1/2 teaspoon baking soda
12 teaspoon salt
2/3 cup orange juice
1 cup sourdough starter
1 cup diced dried apricots
1/2 cup chopped nuts
Preheat oven to 350*.
Prepare a 9" x 5" loaf pan with nonstick spray.
Beat butter and sugar until fluffy.
Add eggs and vanilla and combine well.
Add dry ingredients and oats, alternating with orange juice.
Mix in sourdough starter.
Stir in apricots and nuts.
Pour batter into prepared pan.
Bake at 350* 1 hour, until loaf tests done.
Cool in pan on rack before turning out of pan.
Cool completely before slicing.

Oooh! This sounds good. I made some apricot bread a few weeks ago with ancient home dried apricots. They were so brownish/gray I wasn't sure they would be edible. They were so hard I could chop them into small pieces, I had to snip them with the kitchen shears. I'd work until my hand hurt and then come back a little while later. It took me all morning just to snip them. (I'm such a wimp!) I soaked them in hot water and surprisingly, they turned orange and were just fine. Who knew? I like the addition of sour dough starter and oats. I bet it tastes yummy.
