Parmesan Shortbread Crackers
PARMESAN SHORTBREAD CRACKERS
1/2 cup butter, softened
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried rosemary
1 1/4 cups flour
1 - 2 tablespoons water
Combine all ingredients to make a stiff smooth dough. Start by using just 1 tablespoon water, and add a bit more if necessary to bring dough together. Divide dough in half. Roll each half into a log about 1' diameter. Wrap logs and chill until firm. Preheat oven to 350*. Slice each log into rounds about 1/4" thick and place on baking sheets. Bake at 350* about 22 - 24 minutes, until edges are just beginning to brown.
About 4 dozen crackers
