Carrot Pancakes

We're using
CARROTS
this week in the What's Cooking? Challenge.

Of course during January carrots can also be used as Frosty's nose :)






CARROT PANCAKES

1 egg
1 cup buttermilk
1 teaspoon vanilla
1/4 cup brown sugar
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
2 cups shredded carrots
1/4 cup chopped pecans
1/4 cup raisins

In a mixing bowl, beat egg, buttermilk, and vanilla together.
Stir in brown sugar.
Add remaining dry ingredients and wisk all until smooth.
Add shredded carrots, nuts and raisins and gently combine all.
Pour about 1/3 cup batter onto greased hot griddle.
Cook until bubbles form on top.
Flip over and cook until second side is golden.

About 6 - 8 pancakes

Ooh yum! I only have two bendy carrots at the back of the fridge so I better go shopping LOL.
