Oatmeal Pancakes


OATMEAL PANCAKES

3/4 cup quick-cooking or old-fashioned oats
1/2 cup brown sugar
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons cooking oil
1 cup buttermilk

Combine dry ingredients in small mixing bowl.
Add egg, oil and buttermilk and stir all together until just moistened.
Pour about 1/3 cup batter onto greased hot griddle.
Cook until bubbles form on top.
Turn and cook until second side is golden.

About 6 - 8 pancakes
