Double Chocolate Muffins


DOUBLE CHOCOLATE MUFFINS

8 tablespoons butter, melted
1 1/4 cups brown sugar
2/3 cup cocoa
2 eggs
1 teaspoon cinnamon
2 teaspoons vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon salt
2 teaspoons vinegar
3/4 cup milk
1 cup chocolate chips

Preheat oven to 350*.
Prepare standard size muffin pans with paper cups or nonstick spray.
Combine melted butter and brown sugar.
Add cocoa and blend in thoroughly.
Mix in eggs, cinnamon and vanilla.
Stir in flour, baking soda, baking powder and salt.
Add vinegar and milk, stirring until all ingredients are well combined.
Fold chocolate chips into batter.
Scoop into prepared muffin pans, filling each cup about 3/4 full.
Bake at 350* for 20 - 25 minutes until muffins test done.
Cool in pans on cooling rack for 10 minutes before turning out to serve.
