Harvest Moon Stew


HARVEST MOON STEW

1 lb. breakfast sausage, hot
1.5 lb. small yellow potatoes 
1 lb. fresh or frozen carrots
14. oz can diced tomatoes, undrained
2 cups beef stock
8 oz. sliced mushrooms
1 tsp. dried thyme
salt and pepper to taste

In a large kettle, crumble and brown breakfast sausage.
Prepare potatoes by cutting into halves or chunks to get uniform-size pieces.
Add potatoes to pot, stirring to combine with meat and drippings.
Cook over medium heat about 5 minutes.
Add carrots, canned tomatoes and beef stock, and gently mix all together.
Cover and continue simmering about 15 minutes, until potatoes are beginning to get tender.
Add sliced mushrooms and thyme and cook 5 minutes more, until mushrooms are done.
Season to taste with salt and pepper before serving.
