HAZELNUT COOKIES
6 tablespoons butter, softened
1/2 cup brown sugar
1 egg
2 1/2 cups hazelnut flour (or finely ground hazelnuts)
1/2 teaspoon baking soda
1/2 teaspoon salt
Nutella spread, if desired
Prepare two baking pans with parchment paper.
Preheat oven to 375*.
Combine all ingredients except Nutella to make a smooth dough.
Roll into balls, using about 1 tablespoon of dough for each.
Arrange on prepared pans, and press slightly to flatten.
Bake at 375* for 9 - 10 minutes, until just golden.
Cool on racks.
Serve topped with Nutella if desired.

mmmmm - these look so tasty! I'd leave the Nutella off though because I really like just a plain cookie. Only ever bought Nutella once when the kids were still here and it was met with a resounding chorus of 'yuck'. They were happy with plain ol' peanut butter.
