PUMPKIN SPICE BISCOTTI


PUMPKIN SPICE BISCOTTI

1/4 cup butter, softened
1/2 cup brown sugar
1/4 cup sugar
2 eggs
1/2 cup pumpkin puree
1 teaspoon vanilla
1 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons pumpkin pie spice, or more to taste
   (cinnamon, cloves, nutmeg)
1/2 cup chopped walnuts

Preheat oven to 350*
Prepare a baking sheet pan with nonstick spray.
Combine butter, brown sugar, sugar, eggs, pumpkin puree and vanilla, and beat together until well blended, about 2 minutes.
Add dry ingredients and continue mixing until dough forms.
Fold in chopped walnuts.
Spoon dough onto prepared pan, and form it into two logs, each about 3” x 12”.  Dough will be very sticky, so it may help to coat hands lightly with cooking oil and form logs using hands.
Bake at 350* for 30 – 35 minutes, until logs are beginning to brown.
Remove baking sheet from oven and lower oven heat to 300*.
When logs are cool enough to handle, carefully cut each log into 1/2” thick slices using a serrated knife.
Lay slices back onto baking sheet and bake 15 minutes at 300*.
Turn slices over and bake again for about  15 more minutes at 300*.
Cookies will feel hard and dry when they are done.
Store in an airtight container to maintain crispness.
