2 tablespoons olive oil
1 small onion, chopped
4 boneless skinless chicken breasts
(or about 1 1/4 lb. chicken breast tenderloins)
2 cups cherry tomatoes
1/2 cup balsamic vinegar
2 tablespoons honey
2 cups sliced firm but ripe peaches (about 3 medium)
salt + pepper
Fresh basil if desired
Heat olive oil in large skillet.
Add chopped onion and saute about 5 minutes, until onion begins to soften.
Push onion to sides of skillet and add chicken.
Cook chicken until golden, about 5 minutes on each side.
Add cherry tomatoes over chicken, cover pan and cook 5 minutes more.
Stir in balsamic vinegar and honey.
Top with peaches, cover pan, and simmer about 10 more minutes.
Season to taste with salt and pepper.
Top with chopped fresh basil if desired, and serve warm.
