Overnight Pumpkin French Toast


3 Tbl butter, melted
3 Tbl brown sugar
6 slices day-old French bread , about 1" thick
1/2 cup milk
1 cup pumpkin puree
1/2 cup sugar, or to taste
1 tsp pumpkin pie spice, or to taste
3 eggs

Prepare 9" x 13" baking pan with nonstick spray.
Drizzle melted butter evenly in bottom of pan.
Sprinkle brown sugar over melted butter.
Arrange bread slices on butter/sugar.
In mixing bowl, combine milk, pumpkin puree, sugar and spice.
Add more sugar and/or spice as desired.
Beat in eggs and combine all until thick and smooth.
Spread mixture over bread slices.
Cover with foil and refrigerate overnight.
The next day, preheat oven to 350*.
Remove foil and bake 35 - 40 minutes until set and beginning to brown at edges.
Serve with syrup or whipped cream if desired.
