Apple Pancakes with Cider Syrup

 
 
APPLE PANCAKES WITH CIDER SYRUP

An easy way to add a hint of autumn to your breakfast!

Peel and shred one apple.
Stir into your regular pancake batter, along with 1/2 teaspoon cinnamon.
Prepare pancakes as usual.
Serve pancakes with warm cider syrup.

CIDER SYRUP

Combine 1 cup apple cider, 2 tablespoons brown sugar and 1 tablespoon cornstarch in a small saucepan.
Bring to a low boil, stirring constantly.
Continue cooking and stirring 1 - 2 minutes longer, until syrup thickens.
