GINGER SHORTBREAD
1/2 cup (1 stick) butter
1/2 cup sugar
1 teaspoon vanilla
1 1/4 cups flour
1/4 teaspoon salt
1/2 cup candied ginger, finely minced
Preheat oven to 325*.
Prepare a 9" round or square baking pan with nonstick spray.
Combine butter, sugar, and vanilla, and beat until well-blended.
Add flour and salt and mix until a smooth dough forms.
Add minced ginger to dough and mix until evenly blended.
Press dough into prepared pan.
Bake until shortbread is golden brown all over, with edges a bit browner: about 35 minutes.
When done, loosen edges of shortbread with a table knife, and turn out of baking pan.
Immediately cut into wedges or squares, while still warm.
Cool on rack.
About 12 - 16 pieces
