Blackberry Scones


1 3/4 cups flour
3/4 cup coconut
1/2 cup rolled oats
3 Tbl sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup cold butter
2 eggs
1/2 cup milk
6 oz fresh blackberries
Powdered sugar

Preheat oven to 375*
Prepare baking sheet with nonstick spray.
In a large bowl, combine flour, coconut, oats, 2 Tbl sugar, baking powder and salt.
Cut butter into dry mixture until coarse crumbs are formed.
In a small bowl, beat eggs and milk to blend.
Stir egg mixture into flour mixture until just evenly moistened.
Using about 2 tablespoons per scoop, drop dough onto prepared baking sheet.
Gently pat down and then arrange 4 - 5 blackberries on top of each.
Sprinkle with remaining sugar.
Bake at 375* for about 25 minutes, until lightly browned.
Decorate with powdered sugar before serving if desired.
Serve warm.
