6 Tablespoons butter, softened
4 oz. cream cheese, softened
1 cup sugar
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 ripe bananas, mashed
1/2 teaspoon vanilla extract
1/2 cup pecans if desired
Prepare an 8" x 4" loaf pan with nonstick spray.
Preheat oven to 350*.
Beat butter and cream cheese until creamy.
Add sugar and beat until fluffy.
Add egg and blend all well.
Add dry ingredients, beating until combined.
Stir in bananas, vanilla and pecans.
Spoon into prepared pan.
Bake at 350* for 60 - 7 minutes, until loaf tests done.
Cool in pan for 30 minutes before removing.
Cool completely before slicing.
