Puttering with scraps and traditional piecing, my favorite style of quiltmaking.  The scrap basket never seems to get emptier though, does it?

Through the years I've made more than 4 dozen log cabin/courthouse steps quilts.

APPLE CREAM CHEESE BUNDT CAKE

 

APPLE CREAM CHEESE BUNDT CAKE

Filling -
8 oz package cream cheese, softened
4 Tbl butter, softened
1/2 cup sugar
1 egg
2 Tbl flour
1 tsp vanilla

Cake -
3/4 cup butter, softened
1 cup sugar
1 cup brown sugar
3 eggs
3/4 cup applesauce
1 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsps cinnamon
1 tsp nutmeg
3 cups peeled and chopped apples (about 2 - 3 medium apples)
1 cup chopped pecans

Preheat oven to 350*.
Prepare a 10-cup bundt pan with nonstick spray.
Make filling - Combine cream cheese, 4 Tbl softened butter and sugar in a small bowl.  
Add egg, flour and vanilla, and beat all until smooth.  Set aside.

Make cake batter - In a large bowl. mix 3/4 cup softened butter and sugars until combined.  Add eggs, applesauce and vanilla and continue mixing. 
Slowly add dry ingredients, and combine all thoroughly.  
Finally fold in chopped apples and pecans. 
Spoon about 1/3 of cake batter into prepared pan.  
Top evenly with cream cheese mixture. 
Add remaining cake batter over cream cheese layer.  
Bake at 350*for 70 - 75 minutes until cake tests done.  
Let cool in pan on wire rack for 1/2 hour, then invert onto rack but don't remove pan until completely cooled, another hour or so.

About 12 servings.

Turning over a new leaf ...


September: It's time for turning over a personal new leaf.  What do you want more or less of in your life, so that you can love the life you're leading?  ~SBB~

Hooray! I made it through the hottest summer months and turned the calendar page!! September -- and with it the start of a new school year -- is a time of new beginnings for me. 

 I've been on a bit of a blogging hiatus for a while now, but it's time for me to get busy again.  I do have the amusing Pumpkin Patch top ready to finish, but hot weather is not conducive to layering and quilting.  Anyway, looking forward to autumn!
