NONETTES - Orange Spice Cakes
Cakes:
1/4 cup honey
1/4 cup brown sugar
1/3 cup orange juice
4 tablespoons butter
3/4 cup flour
1/3 cup rye flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/4 teaspoon black pepper
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla
1 egg yolk
3 tablespoons orange marmalade
Glaze:
1/2 cup powder sugar
1-2 tablespoons orange juice
Preheat oven to 375*.
Prepare muffin pan with paper liners, or butter each little cup.
In a small saucepan, gently heat honey, brown sugar, orange juice and butter, stirring until just melted and smoothly combined.
In a mixing bowl, combine flours, spices, baking powder and baking soda.
Pour still-warm honey mixture over dry ingredients and stir all together.
Add vanilla and egg yolk and mix all.
Fill each muffin cup about 2/3 full.
Place a scant teaspoon of marmalade on top of batter in each cup. It will sink in during baking.
Bake at 375* for 14-15 minutes, until golden brown and dough springs back when gently pressed.
While the cakes are baking, prepare a thin glaze by combining powder sugar and 1-2 tablespoons orange juice until sugar is dissolved.
When cakes are removed from oven, while they are still in baking pan, spoon glaze over each one, letting it drip down sides.
Let cakes cool in pan before removing to serve.
