JAM CRUMB BARS
1 cup butter, softened
1 cup sugar
1 1/2 cups flour
1 1/2 cups flour
2 cups chopped pecans
1 cup dry oats
1/4 teaspoon salt
1 egg
13 oz. jar strawberry preserves, approximately 1 cup
(or substitute another flavor of jam if preferred)
Preheat oven to 350*.
Line a 9 x 9 baking pan with parchment paper, and spray parchment with nonstick spray.
In a large mixing bowl, combine softened butter, sugar, flour, chopped pecans, dry oats and salt to create a loose crumbly mixture.
Set aside 1/3 of crumb mixture.
Add egg to remaining crumb mixture in bowl and mix all together to form a soft dough.
Press dough into bottom of prepared baking pan.
Spread strawberry preserves gently over dough layer.
Sprinkle reserved crumb mixture evenly over preserves.
Bake at 350* about 45 minutes until lightly browned.
Cool completely in pan before cutting into bars.
About 12 servings.

My mom used to make something similar to this - sometimes she'd put dates in it instead of the jam.
