SOLSTICE HONEY CAKE
6 tablespoons butter, softened
1/3 cup sugar
1 egg
1/4 cup honey
1 teaspoon vanilla
1 teaspoon lemon juice
1 cup flour
1/2 cup almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup plain yogurt
2 tablespoons butter
1/4 cup honey
1 tablespoon lemon juice
Preheat oven to 350*
Prepare a honeycomb pan or 9" round cake pan with nonstick spray.
Beat 6 tablespoons butter and sugar until fluffy.
Add egg, 1/4 cup honey, vanilla and 1 teaspoon lemon juice, combining well.
Stir in flour, almond flour, baking powder, baking soda and salt.
Add yogurt and blend all well.
Spread batter into prepared pan.
Bake at 350* 30 minutes until deep golden brown.
Cool on rack 10 minutes, then turn out onto serving plate.
Melt remaining 2 tablespoons butter.
Stir 1/4 cup honey and 1 tablespoon lemon juice into melted butter to create glaze.
Pour glaze over warm cake.
About 6 servings
