Cowboy Beans

COWBOY BEANS

4 slices bacon
1 onion, chopped
1 lb. lean ground beef
2x  15 oz. cans diced tomatoes
28 oz. can pork and beans
15 oz. can butter beans
15 oz. can red kidney beans
1/4 cup cider vinegar
1/2 cup brown sugar
2 tablespoons liquid smoke flavoring

In a large pot, fry bacon slices until crisp.
Drain and blot crisp bacon on paper towels, and set aside.
Saute chopped onion in bacon drippings remaining in pot until soft.
Add ground beef and cook until browned.
Rinse cooked ground beef with onion in colander to remove excess fat.
Return to pot and add undrained diced tomatoes.
Drain and rinse all beans in colander and add to pot.
Add vinegar, brown sugar, and liquid smoke and combine all.
Simmer until heated through.
Serve with crumbled bacon on top.
