Honey Almond Cake

This week's 'What's Cooking?' ingredient is honey.  Here's a recipe for a nice cake with a honey-nut topping, delicious with a cup of coffee.

 HONEY ALMOND CAKE

Cake:
8 oz. cream cheese, softened 
1/4 cup milk
1/4 cup cooking oil
1/4 cup sugar
1 1/2 cups flour
1/4 teaspoon salt
2 teaspoons baking powder

Topping:
5 Tablespoons butter
1/4 cup sugar
1/3 cup honey
1 teaspoon vanilla
1 cup sliced almonds

Preheat oven to 350*
Prepare a 9” baking pan with nonstick spray.

Cake:
In a mixing bowl, combine cream cheese, milk and oil, and beat until smoothly combined.
Add 1/4 cup sugar and blend all well.
Add flour, salt and baking powder and mix until a smooth thick dough forms.
Spread dough into prepared pan.

Topping:
Melt butter in a small saucepan.
Add sugar and honey.
Heat to boiling, stirring constantly, until syrupy and thick.
Remove from heat and add vanilla and almonds.
Pour topping mixture over dough in pan.

Bake at 350* for 30 minutes, or until topping is golden brown and cake tests done.
Cool before serving.

That looks like my kind of cake. Can't wait to make it. I love cake. When I was younger, I would even have cake for breakfast when it was available. Then it started showing up around my middle portion so I had to cut out the breakfast cake. Ha Ha
