Sweet Potato Salad

Here's my first entry for Judy's What's Cooking? challenge. 

The challenge ingredient this week is SWEET POTATOES, which I happened to have in the refrigerator, left over from Christmas dinner.  This is an easy salad to prepare, savory rather than sweet, and a bit unusual.  It's almost suggestive of Carribbean flavors, and would be  nice to serve with chicken, shrimp, or fish.


 
SWEET POTATO SALAD

4 cups cooked sweet potatoes, cut into 1/2-inch cubes
        (about 2 – 2 1/2 lb. potatoes)
½ cup chopped red bell pepper
½ cup chopped celery
8 green onions, chopped
8 slices crisply cooked bacon, crumbled
¾ cup mayonnaise
3 Tbsp. lime juice

Combine sweet potatoes, peppers, celery, onions and bacon; toss lightly.
Mix mayonnaise and lime juice until well blended.
Pour over potato mixture; stir gently.
Refrigerate at least 2 hours before serving.

About 8 - 10 servings

Interesting -- I tend to think brown sugar and and cinnamon when thinking of sweet potatoes - not bacon and mayonnaise.
